BBQ Chicken Pasta

Ingredients 🔗

  • 2 ½ cups water
  • 2 cups rotini pasta
  • ½ cup Sweet Baby Ray’s BBQ sauce
  • 2 green onions, chopped
  • 1 cup red & green bell peppers, chopped
  • Velveeta cheese
  • 2-3 Chicken Breasts

Directions 🔗

  • Cook and stir chicken in large nonstick skillet on medium heat 8-10 minutes or until done. Remove from skillet; cover to keep warm.
  • Add water to skillet, bring to boil, stir occasionally and scrape fond from bottom of skillet. Add pasta and stir. Cover and simmer 10 minutes. Stir in BBQ sauce and onions; cook covered 2 minutes.
  • Stir in chicken along with the peppers. Top with Velveeta and covered for 2 minutes or until Velveeta begins to melt. Remove from heat and stir. Sprinkle with remaining onions.

Alternate (Patrick’s Directions) 🔗

  • Cook chicken in large nonstick skillet on medium heat until browned.
  • Add water and pasta to skillet, mix and cover for 10 mins.
  • When pasta is al dente stir in onions and peppers.
  • Add Velveeta and cover until it’s well melted in. Remove from heat. Sprinkle with remaining onions, add BBQ sauce, and mix.
