Basil Pesto

Ingredients

  • 2 cups fresh basil leaves
  • 1/2 cup pine nuts
  • 2 cloves garlic
  • 1/2 cup extra virgin olive oil
  • 1/4 cup Parmesan cheese, finely grated
  • 1/4 cup Pecorino Romano cheese, finely grated (optional)
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 teaspoon fine sea salt

Directions

Combine basil, pine nuts, garlic, and a small amount of olive oil in a food processor. Pulse until coarse. Add remaining ingredients one at a time until the mixture reaches the desired consistency. Serve immediately or store in an airtight container in the refrigerator for up to 3 days. Stir before use.
